With the warmth of curry, the sweetness of mango chutney, and the comforting taste of chicken, this quiche is sure to be a crowd-pleaser at your next gathering. So, grab your apron, and let's dive into the world of coronation quiche!

The History of Coronation Chicken

Before we delve into the actual recipe, it's essential to understand the origins of coronation chicken salad. This dish was created in 1953 for the coronation of Queen Elizabeth II and quickly became a popular British staple. The combination of tender chicken, creamy mayonnaise, and aromatic curry powder creates a unique and delicious flavor profile, reminiscent of the British Empire's influence in India.

The Art of Quiche Making

Quiche, a savory, open-faced pastry dish filled with custard and other ingredients, hails from French cuisine. While quiche Lorraine is arguably the most famous type of quiche, there are countless variations to suit any taste. The beauty of quiche lies in its versatility, making it an ideal vehicle for my coronation chicken-inspired filling.

Preparing the Perfect Crust

A great quiche starts with a fantastic crust. In this recipe, we use a classic buttery pie crust, which provides a tender and flaky base for our flavorful filling. The key to a perfect crust lies in using cold butter and adding just enough ice water to bring the dough together. By following these steps, you'll create a mouthwatering crust that complements the coronation quiche filling beautifully.

Crafting the Coronation Quiche Filling

Now that we have our crust ready, it's time to create the star of the show – the coronation quiche filling! We begin by cooking onions and spices in vegetable oil to create a fragrant base. Next, we add cooked chicken, curry powder, turmeric, and cumin to create a delicious, aromatic filling that pays homage to coronation chicken. Finally, we whisk together eggs and milk or half-and-half, creating a custard to hold everything together.

Assembling and Baking Your Coronation Quiche

With our crust and filling prepared, we're ready to assemble the quiche. First, spread the chicken mixture evenly over the partially baked crust. Next, pour the custard mixture over the chicken and dollop spoonfuls of mango chutney on top. Finally, sprinkle grated cheddar cheese over the quiche for a delightful, gooey finish. Bake your masterpiece until the filling is set and the crust is golden brown, then let it cool slightly before serving. For a final touch, garnish with fresh cilantro if desired.

My coronation quiche recipe is a delicious and unique fusion of British and French culinary traditions. By combining the flavors of coronation chicken with the classic quiche format, I’ve created a dish that's perfect for brunch, lunch, or a light dinner. With its warm spices, sweet mango chutney, and tender chicken, this quiche is sure to impress your family and friends. So, why not give this recipe a try at your next gathering? Ingredients

For the Crust
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cubed
  • 3-4 tablespoons ice water
For the Filling
  • 1 tablespoon vegetable oil
  • 1 small onion, finely chopped
  • 1 1/2 cups cooked chicken, shredded or diced
  • 1 teaspoon curry powder
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cumin
  • Salt and black pepper, to taste
  • 3 large eggs
  • 1 cup whole milk or half-and-half
  • 1/2 cup grated cheddar cheese
  • 1/4 cup mango chutney
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the crust: In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs. Gradually add the ice water, a tablespoon at a time, mixing until the dough comes together.
  3. Form the dough into a disk, wrap it in plastic wrap, and chill for at least 30 minutes.
  4. On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Transfer it to a 9-inch pie plate or quiche pan, pressing it gently into the bottom and up the sides. Trim any excess dough and crimp the edges if desired. Prick the bottom of the crust with a fork to prevent puffing during baking.
  5. Partially bake the crust: Line the crust with parchment paper and fill it with pie weights or dried beans. Bake for 15 minutes, then remove the weights and parchment and bake for an additional 5-7 minutes, until lightly golden. Remove the crust from the oven and let it cool slightly while you prepare the filling.
  6. In a skillet, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Stir in the cooked chicken, curry powder, ground turmeric, ground cumin, salt, and black pepper. Cook for 2-3 minutes to allow the flavors to meld.
  7. In a medium bowl, whisk together the eggs and milk or half-and-half.
  8. Spread the chicken mixture evenly over the partially baked crust. Pour the egg mixture over the chicken, making sure it's evenly distributed. Dollop spoonfuls of mango chutney over the quiche and sprinkle the grated cheddar cheese on top.
  9. Bake the quiche for 35-40 minutes, or until the filling is set and the crust is golden brown. If the crust is browning too quickly, cover the edges with foil.
  10. Remove the quiche from the oven and let it cool for 10-15 minutes before slicing. If desired, garnish with chopped fresh cilantro before serving. Enjoy your coronation quiche warm or at room temperature.
