Ingredients:

  • 500g boneless, skinless chicken thighs, cut into bite-sized pieces

  • 1 cup plain yogurt

  • 3 tablespoons ghee or unsalted butter

  • 1 large onion, finely chopped

  • 3 cloves garlic, minced

  • 1 tablespoon grated ginger

  • 1 tablespoon garam masala

  • 1 tablespoon ground coriander

  • 1 tablespoon ground cumin

  • 1 teaspoon turmeric powder

  • 1 teaspoon paprika

  • 1/2 teaspoon chili powder (adjust to your spice preference)

  • 1 can (400g) crushed tomatoes

  • 1 cup heavy cream

  • 2 tablespoons tomato paste

  • Salt and pepper to taste

  • Fresh cilantro leaves for garnish

Instructions:

1. In a mixing bowl, combine the chicken pieces with yogurt, 1 tablespoon of ghee, half of the ginger, half of the garlic, garam masala, ground coriander, ground cumin, turmeric powder, paprika, chili powder, salt, and pepper. Mix well, cover, and refrigerate for at least 2 hours (preferably overnight) to marinate.

2. In a large skillet or saucepan, heat the remaining 2 tablespoons of ghee over medium heat. Add chopped onions and sauté until soft and translucent.

3. Add the remaining ginger and garlic to the onions, cook for a minute until fragrant.

4. Stir in the marinated chicken and cook until the chicken is browned on all sides.

5. Pour in the crushed tomatoes and tomato paste, stirring well to combine. Simmer the mixture on low heat for about 15 minutes, allowing the flavors to meld.

6. Slowly stir in the heavy cream and let it simmer for an additional 10 minutes, allowing the sauce to thicken.

7. Adjust the seasoning with salt and pepper according to your taste preferences.

8. Serve the butter chicken over steamed rice or with naan bread. Garnish with fresh cilantro leaves for a burst of color and flavor.

Notes to Make It Better:

  • For a smoky flavor, you can add a teaspoon of smoked paprika or a few drops of liquid smoke to the marinade.

  • To make it spicier, increase the amount of chili powder or add a pinch of cayenne pepper.

  • For a healthier version, you can use Greek yogurt instead of heavy cream or a combination of yogurt and coconut milk.
