Ingredients:

2 cups chicken broth

2 carrots, sliced
2 celery stalks, chopped
1 bay leaf

2 tbsp fresh parsley, chopped
1 tbsp fresh thyme, chopped
Instructions:
1. Season the chicken pieces with salt and pepper on both sides.
2. In a large skillet or Dutch oven, melt the butter over medium heat. Add the chicken pieces, starting with the largest pieces (like breasts) and brown them for about 6-8 minutes on each side. Continue with the smaller pieces, adjusting cooking times accordingly.
3. Remove the chicken and set it aside. In the same skillet, add the onions and garlic, sautéing until translucent.
4. Pour in the chicken broth and white wine (if using). Bring to a simmer.
5. Add the carrots, celery, and bay leaf to the skillet. Stir to combine.
6. Return the browned chicken pieces to the skillet, submerging them in the liquid.
7. Reduce the heat, cover, and let simmer for about 35-40 minutes, or until the chicken is cooked through.
8. Remove the chicken pieces and set them aside. Increase the heat and let the sauce reduce for about 10 minutes.
9. Stir in the heavy cream, parsley, and thyme. Allow the sauce to thicken for 5 minutes.
10. Return the chicken pieces to the skillet and coat them in the sauce. Let everything simmer for an additional 5 minutes.
11. Adjust seasoning if necessary, then serve hot.

• Properly browning the chicken pieces will provide a richer depth of flavor. Make sure the skin is crispy before setting them aside.
• A quality white wine can enhance the flavor, but it can be omitted if preferred.
• If the sauce is too thin, thicken it using a mixture of cornstarch and water. Mix 1 tbsp of cornstarch with 2 tbsp of water and slowly add it to the simmering sauce, stirring constantly.
