Gourmet Roasted Butternut Squash Soup

Ingredients:

  • 1 large butternut squash, peeled, seeds removed, and cubed

  • 1 whole garlic bulb

  • 2 tbsp olive oil

  • Salt and pepper, to taste

  • 1 large onion, thinly sliced

  • 2 tbsp unsalted butter

  • 4 cups vegetable broth

  • 1/4 tsp ground nutmeg

  • 1/2 tsp dried sage (or 1/4 teaspoon ground sage)

  • 1/4 cup heavy cream (optional)

  • Browned butter, for drizzling

  • Toasted almonds or walnuts, for garnish (if available)

Instructions:

1. Preheat oven to 425°F (220°C).

2. Toss butternut squash cubes with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet.

3. Slice top off garlic bulb, drizzle with remaining olive oil, wrap in foil, and place on the baking sheet.

4. Roast squash and garlic for 35-40 minutes until tender and caramelized.

5. In a pot, melt butter on medium heat. Caramelize sliced onion for 15-20 minutes.

6. Add roasted garlic cloves and squash to the pot.

7. Incorporate vegetable broth, nutmeg, and dried sage. Bring to a boil, then simmer for 15 minutes.

8. Puree the soup until smooth using an immersion or countertop blender.

9. Add heavy cream (if using), warm for 5 more minutes, and adjust seasoning.

10. Serve hot with a drizzle of browned butter and a sprinkle of toasted nuts if available.
