Potato Chip Cookies

Description: Janie Richardson’s Potato Chip Cookies are a delightful blend of sweet and salty flavors, perfect for those who love a bit of crunch in their treats. These unique cookies combine the buttery richness of traditional cookies with the unexpected twist of crushed potato chips and butterscotch chips. Ideal for snacks, parties, or as a surprising twist to the classic cookie.

Prep Time: 15 minutes

Cook Time: 10 minutes per batch

Inactive Time: N/A

Servings: Makes 6 dozen

Ingredients:

• 1 cup margarine, softened

• 1 cup packed brown sugar

• 1 cup sugar

• 2 eggs

• 1 teaspoon vanilla flavoring

• 2 cups crushed potato chips

• 1 (6 oz.) package butterscotch chips

• 2½ cups plain flour

• 1 teaspoon baking soda

Instructions:

1. Preheat your oven to 350°F (175°C). Grease a cookie sheet and set aside.

2. In a large mixing bowl, cream together the softened margarine, brown sugar, and sugar until light and fluffy.

3. Add the eggs and vanilla flavoring to the creamed mixture and stir well.

4. Gently fold in the crushed potato chips.

5. In a separate bowl, sift together the plain flour and baking soda. Gradually add these dry ingredients to the wet mixture, mixing until just combined.

6. Stir in the butterscotch chips.

7. Drop spoonfuls of the cookie dough onto the prepared cookie sheet, leaving space between each cookie for expansion.

8. Bake in the preheated oven for about 10 minutes, or until the cookies are lightly browned.

9. Remove from the oven and allow the cookies to cool on the cookie sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes to Make it Better:

• For a richer flavor, you can use butter instead of margarine.

• To add texture, consider including chopped nuts in the dough.

• Watch the cookies closely as baking times may vary slightly depending on the size of your cookies.
