Million Dollar Pie

Description: Joyce Long's Million Dollar Pie is an exquisite and effortless dessert that's rich in flavor and texture. This no-bake pie combines the creamy sweetness of Cool Whip and Eagle Brand milk with the tropical tastes of coconut and pineapple, along with the crunch of chopped nuts. Accented with a hint of lemon juice, this pie is as refreshing as it is indulgent, perfect for special occasions or as a delightful treat any day.

Prep Time: 15 minutes

Inactive Time: 2 hours (for chilling)

Servings: 16 (2 pies, 8 servings each)

Ingredients:

- 1 (9 oz.) container Cool Whip

- 1 cup coconut

- 1 small can crushed pineapple, drained

- 1 can Eagle Brand milk (sweetened condensed milk)

- 1 cup nuts, chopped

- ¼ cup lemon juice

- 2 (9-inch) pie shells, cooked and cooled

Instructions:

1. In a large mixing bowl, combine the Cool Whip, coconut, drained crushed pineapple, Eagle Brand milk, chopped nuts, and lemon juice. Stir the ingredients together until well mixed.

2. Evenly divide the mixture and pour it into the two cooked and cooled 9-inch pie shells.

3. Smooth the tops with a spatula or the back of a spoon.

4. Place the pies in the refrigerator and chill for at least 2 hours, or until the filling is set and firm.

5. Serve the pies chilled. Optionally, garnish with additional coconut, nuts, or a slice of pineapple before serving.

Notes to Make it Better:

- For a healthier version, use a reduced-fat or light Cool Whip and a reduced-fat pie crust.

- You can try different types of nuts like pecans, walnuts, or almonds for varied flavors and textures.

- For a more intense lemon flavor, add a bit more lemon juice or some grated lemon zest to the filling.
