Elote Creamy Corn Dip

Description: Experience the rich and spicy taste of Mexican street corn in this creamy dip. With baked cheese on top and garnished with jalapeño slices, it’s the perfect crowd-pleaser for any gathering.

Ingredients:

  • 2 cans corn, drained

  • 1 block cream cheese (8 oz.), softened

  • 2 jalapeños: 1 deseeded and diced, 1 deseeded and sliced into circles

  • 2 tsp tajin (or to taste)

  • 1.5 cups Mexican cheese blend, shredded (1 cup for the mixture, 0.5 cup for topping)

  • 2 cloves garlic, minced

  • 1/4 cup onion, finely diced

  • 1/4 cup heavy cream

  • Salt and black pepper, to taste

  • 1 tbsp olive oil or butter for sautéing

Instructions:

1. Preheat oven to 375°F (190°C).

2. In a skillet over medium heat, add olive oil or butter. Once hot, sauté the diced jalapeño, garlic, and onion until they become translucent and fragrant, about 3-5 minutes.

3. Stir in the drained corn and continue cooking for another 3-4 minutes until heated through.

4. Reduce the heat to low. Add in the cream cheese and heavy cream, stirring continuously until the cream cheese is fully melted and the mixture is creamy.

5. Mix in 1 cup of the shredded Mexican cheese blend until well incorporated.

6. Season with tajin, salt, and black pepper. Adjust to taste.

7. Transfer the dip to an oven-safe serving dish. Sprinkle the remaining 0.5 cup of Mexican cheese blend on top, then garnish with the jalapeño circles.

8. Bake in the preheated oven for about 10-15 minutes or until the cheese on top is bubbly and golden brown.

9. Let it cool for a few minutes and then serve warm with your favorite tortilla chips or sliced bread.

Notes to Make it Better:

  • If you want an extra kick, you can add a pinch of cayenne pepper or use more jalapeños.

  • Fresh cilantro, finely chopped, can be added for a fresh burst of flavor.

  • For a smokier flavor, you can char the corn in the pan before adding the cream cheese and other ingredients.
