One-Pan Cheesy Fried Crispy Potatoes and Egg Skillet

Ingredients:

  • 4 day old baked potatoes, cubed

  • 4 eggs

  • A handful of chives, finely chopped

  • 1 yellow onion, diced

  • 1 cup fresh grated cheddar cheese

  • 1 tsp garlic salt (adjust to taste)

  • 1/2 tsp black pepper (adjust to taste)

  • 2 tbsp olive oil

  • 1 tbsp butter

Instructions:

1. Heat a large skillet over medium heat. Add butter and olive oil, letting the butter melt.

2. Once the butter is melted, add the diced yellow onion. Sauté until translucent, about 3 minutes.

3. Add the cubed day-old baked potatoes to the skillet. Sprinkle with garlic salt and black pepper. Cook, stirring occasionally, until the potatoes are golden and crispy, about 10-12 minutes.

4. Once the potatoes are crispy, create four wells in the potato and onion mixture.

5. Crack an egg into each well. Sprinkle the cheddar cheese around the eggs and over the potatoes.

6. Cover the skillet and cook until the egg whites are set but the yolks remain runny, about 4-5 minutes. If you prefer your yolks fully set, cook for an additional 2-3 minutes.

7. Remove from heat, sprinkle with freshly chopped chives, and serve immediately.

Notes to Make It Better:

  • For an even richer flavor, consider using a mix of cheeses, like mozzarella or gouda.

  • Add a dash of smoked paprika or cayenne for a little kick.

  • Always use fresh grated cheese as pre-shredded cheeses often contain anti-caking agents which can affect the melting process.
