Ingredients:
4 chicken leg quarters
1 cup mayonnaise
2 cups all-purpose flour
1 tablespoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
1/2 teaspoon salt
Cooking spray or vegetable oil
Instructions:
1. Rinse the chicken leg quarters and pat them dry.
2. Preheat your oven to 425°F (220°C). Meanwhile, in a separate bowl, mix together the flour, paprika, garlic powder, onion powder, black pepper, and salt.
3. Coat each chicken leg quarter with a thin layer of mayonnaise.
4. Roll each mayonnaise-coated chicken piece in the flour mixture, making sure they’re fully covered.
5. Place the chicken pieces on a baking sheet, skin side up. Lightly spray or brush each piece with cooking spray or oil.
6. Bake in the preheated oven for about 50-60 minutes, or until the chicken is golden brown and the internal temperature reaches 165°F (74°C) when checked with a meat thermometer.
7. Remove the chicken from the oven and let it rest for a few minutes before serving. Enjoy!
Notes to Make It Better:
For extra crispy skin, you can broil the chicken for an additional 2-3 minutes after baking. Just watch it carefully to avoid burning.
Adjust the spices to your taste. You could add cayenne pepper for a spicy kick or dried herbs for extra flavor.
