Southern-Style Smothered Pork Chops

Ingredients:

• 4 bone-in pork chops, about 1 inch thick

• Salt and pepper to taste

• 1/2 cup all-purpose flour

• 2 tablespoons vegetable oil

• 2 medium onions, thinly sliced

• 2 cups chicken broth

• 2 cloves garlic, minced

• 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

• 1 teaspoon paprika

Instructions:

1. Season the pork chops with salt and pepper, then dredge them in the flour. Set aside about 2 tablespoons of the remaining flour.

2. In a large skillet, heat the vegetable oil over medium-high heat. Add the pork chops and sear on both sides until golden brown, about 5 minutes per side. Remove the chops and set them aside.

3. In the same skillet, add the onions. Sauté until they become translucent and start to brown, about 5 minutes. Add the garlic, thyme, and paprika, cooking for an additional 1-2 minutes.

4. Sprinkle the reserved flour over the onions, stirring to combine. Cook for a minute or two to remove the raw flour taste.

5. Gradually add the chicken broth to the skillet, stirring constantly to create a smooth gravy.

6. Return the pork chops to the skillet, nestling them into the onion gravy. Reduce the heat to low, cover, and simmer for about 45 minutes, until the pork is tender.

7. Allow the pork chops to rest for 15 minutes before serving. This will ensure the juices redistribute evenly, creating a more flavorful chop.

8. Serve the pork chops with plenty of the onion gravy on top.

Notes to Make It Better:

  • Using bone-in pork chops adds more flavor to the dish.

  • The longer you allow the chops to simmer in the gravy, the more tender they will become.

  • This dish pairs well with mashed potatoes, green beans, or coleslaw.
