Ingredients:

• 4 boneless skinless chicken breasts

• Salt and black pepper, to taste

• 1/2 cup all-purpose flour

• 2 tablespoons olive oil

• 2 tablespoons unsalted butter

• 1 cup sliced mushrooms

• 3/4 cup Marsala wine

• 1/2 cup chicken broth

• 1/4 cup chopped fresh parsley

Instructions:

1. Season chicken breasts with salt and black pepper, then dredge in flour, shaking off the excess.

2. Heat the olive oil in a skillet over medium-high heat. Add the chicken and sear until golden brown on both sides, about 3-4 minutes per side. Remove from the skillet and set aside.

3. In the same skillet, add butter and mushrooms. Sauté until the mushrooms are browned and their liquid has evaporated.

4. Add the Marsala wine and bring to a boil, scraping the bottom of the pan to loosen any browned bits. Add the chicken broth and simmer for about 10 minutes, or until the sauce is reduced by half.

5. Return the chicken to the skillet and simmer in the sauce for another 10 minutes, or until the chicken is cooked through and the sauce has thickened.

6. Garnish with fresh parsley before serving.

Notes:

• For an even richer flavor, use a dry Marsala wine.

• If you prefer a thicker sauce, you can add a slurry of 1 tablespoon cornstarch mixed with 2 tablespoons of water into the sauce before adding the chicken back.

• For added depth, consider adding a clove of minced garlic or some chopped shallots when you’re sautéing the mushrooms.
