Are you a fan of Panera Bread's Broccoli & Cheddar Soup? Well, y'all are in luck! I've got the secret recipe for a copycat version that's just as delicious and comforting as the original. And the best part? It's made in a Crockpot Turbo Express for easy prep and clean up.

"Ingredients to Make Your Soup Sizzle"

To make this soup, you'll need:

  • 1 large head of broccoli, washed & chopped into bite size pieces (including the stem)

  • 1 small carrot, peeled & grated

  • 1 yellow onion, finely diced

  • 4 cloves of garlic, minced fine

  • 8 cups of vegetable stock

  • 4 cups of heavy cream

  • 1 block of cheddar cheese, grated

  • 1/4-1/2 cup cornstarch mixed with 1 cup of water for a thickener for the soup

  • 2 tsps nutmeg

  • 2 tsps yellow mustard powder

  • 4 tbsps butter, salted

  • 2 tbsps olive oil

  • Salt & black pepper to taste

And don't forget to peel that stem on the broccoli - it adds a nice texture to the soup!

First things first, hit the "Manual" button and then the "Sauté/Brown" button on your Crockpot Turbo Express. Add in the garlic, onions, and seasonings and sauté until fragrant and slightly caramelized. Then add in the broccoli and grated carrots and sauté for an additional 5-10 minutes.

Once your veggies are sautéed to perfection, hit the "Start/Stop" button on your Crockpot Turbo Express. Next, hit the "Soup/Stew" button and add in the vegetable stock. Let it cook for about ten minutes. Then, add in the cheese and allow it to melt into the soup. Hit "Start/Stop" again.

Now, it's time to make this soup extra creamy and delicious. Add in the heavy cream, and make sure to stir as you pour to prevent the cream from curdling. In the remaining heat, add in your cornstarch slurry and stir until dissolved.

This recipe is a copycat version of Panera Bread's broccoli and cheddar soup. It is made with ingredients such as broccoli, carrot, onion, garlic, vegetable stock, heavy cream, cheddar cheese, cornstarch, nutmeg, yellow mustard powder, butter, olive oil, salt, and pepper. Instructions

  1. In your Crockpot Turbo Express, hit the “Manual” button and then the “Sauté/Brown” button.
  2. Add in your garlic, onions and seasonings. Sauté until onions and garlic have become fragrant and slightly caramelized.
  3. Now add in your broccoli and grated carrots and sauté for another 5-10 minutes.
  4. Once done hit the “Start/Stop” button on your Crockpot Turbo Express.
  5. Then hit the “Soup/Stew” button your Crockpot Turbo Express.
  6. Add in your vegetable stock and cook for about ten minutes.
  7. Now add in your Cheese and allow it to melt into the vegetables and stock.
  8. Now hit the “Start/Stop” button again.
  9. Add in your heavy cream and stir well. Stir as you pour to prevent the heavy cream from curdling.
  10. In the remaking heat add in your cornstarch slurry and stir well until mixed together and dissolved well into the soup.
  11. Once it’s done hit the “Keep Warm” button to keep it warm throughout the day.
  12. Serve and enjoy with my Two Ingredient Crostini Sourdough Bread!
