Blueberry Lemon Loaf

This recipe for blueberry lemon loaf is a delicious and easy-to-make dessert. It's the perfect balance of sweet and tart, and is sure to satisfy your cravings for something sweet. The recipe is made with simple ingredients including self-rising flour, buttermilk, oil, sugar, lemon zest, and fresh blueberries. All you need to do is mix the ingredients together, pour the batter into a loaf pan, and bake for about an hour and a half. Once it's cooled, slice and serve for a tasty treat.

Ingredients

  • 2 cups of Flour
  • 2 cups of Blueberries, rinsed
  • 1 cup of Oil
  • 1 cup of Buttermilk or Filmjolk
  • 1/2 cup of Sugar
  • 2 tbsps of Baking Powder
  • 1 tsp of Salt
  • 1 tsp of Lemon Extract
  • Zest of 1 Lemon
  • Juice of 1 Lemon

Instructions

  1. Soft the flour, salt and baking powder together.
  2. Zest the lemon as much as you can until it looks naked and add all the zest into the flour.
  3. Add your lemon extract, lemon juice, sugar, buttermilk or Filmjolk and oil to your mix.
  4. Stir well until no more lumps are found.
  5. Rinse off your blueberries and fold them into the dough with a silicone spatula.
  6. Grease a small loaf pan with vegetable oil or spray and add in your loaf mix. Use the spatula to press down any uneven areas on top of the loaf.
  7. If you’d like a crackling effect, sprinkle a little sugar on top of the mix.
  8. Place into a 350F preheat oven and bake for 1 hour and 15-20 minute’s depending on your oven.
  9. Test with a toothpick to see if center is done.
  10. Take it out just right before the toothpick comes out clean.
  11. Let it rest on a wire rack for 30 extra minutes covered.
  12. Once rested, flip out unto a wire rack, slice and serve!
  13. I love mine with a big ole glass of ice cold milk! Yummy!
