Ingredients:
For the Pancakes:
1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk (see below for homemade version)
1 large egg
2 tablespoons melted butter
1 teaspoon vanilla extract
For the Homemade Buttermilk:
1 cup milk
1 tablespoon lemon juice
Instructions:
For the Homemade Buttermilk:
1. Combine milk and lemon juice in a bowl.
2. Let it stand for 5-10 minutes until thickened and slightly curdled.
For the Pancakes:
1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
2. In another bowl, mix the homemade buttermilk, egg, melted butter, and vanilla.
3. Pour the wet ingredients into the dry ingredients and stir until just combined.
4. Preheat a griddle over medium heat and lightly grease.
5. Pour 1/4 cup batter for each pancake and cook until bubbles form on the surface, then flip and cook until golden brown.
6. Serve warm with your favorite toppings.
Notes to Make It Better:
• Don’t overmix the batter; lumps are fine.
• Let the batter rest for a few minutes for fluffier pancakes.
• Adjust heat as needed to avoid over-browning.
