Ingredients:

• 1 cup Crisco (vegetable shortening)

• 2 eggs

• 1⅓ cups sugar

• A dash of salt

• 2½ teaspoons vanilla extract

• 1 teaspoon baking soda

• 1 teaspoon vinegar

• 4½ cups flour

Instructions:

1. Preheat your oven to 350°F (175°C). Lightly grease a cookie sheet and set aside.

2. In a large mixing bowl, cream together the Crisco and sugar until light and fluffy.

3. Beat in the eggs, one at a time, followed by the vanilla extract and a dash of salt.

4. In a small bowl, mix together the baking soda and vinegar. It will fizz upon mixing. Quickly add this mixture to the creamed ingredients.

5. Gradually blend in the flour, mixing until a soft dough forms.

6. On a lightly floured surface, roll out the dough to your desired thickness. Cut the dough into cookies using cookie cutters.

7. Place the cut cookies onto the prepared cookie sheet.

8. Bake in the preheated oven for 10-12 minutes, or until the cookies are lightly browned.

9. Remove from the oven and let the tea cakes cool on the cookie sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes to Make it Better:

• For a different flavor, you can add a touch of almond extract or lemon zest to the dough.

• Ensure the dough is chilled for about 30 minutes before rolling it out if it’s too sticky.

• You can sprinkle the cookies with a little sugar or cinnamon sugar before baking for added sweetness.
