Ingredients

• 2 lbs boneless chicken breasts, cut into cubes

• 1 cup pineapple juice

• 1/4 cup soy sauce

• 1/4 cup brown sugar

• 2 cloves garlic, minced

• 1 teaspoon ginger, grated

• 1 bell pepper, cut into chunks

• 1 small red onion, cut into chunks

• 1 cup pineapple chunks

• Skewer sticks

Instructions

1. Marinate Chicken: In a bowl, whisk together pineapple juice, soy sauce, brown sugar, garlic, and ginger. Add chicken cubes and marinate for at least 2 hours, preferably overnight.

2. Preheat Grill: Preheat your grill to medium-high heat.

3. Assemble Skewers: Thread marinated chicken, bell pepper, onion, and pineapple chunks onto skewer sticks.

4. Grill Skewers: Grill the skewers for about 7-8 minutes on each side or until the chicken is cooked through.

5. Serve: Enjoy hot, perhaps with a side of rice or salad.

Notes

• If using wooden skewers, soak them in water for at least 30 minutes before use to prevent burning.
