Golden Chicken Bone Broth/Stock

Description: A rich and flavorful bone broth made from chicken carcass, infused with fresh herbs and roasted vegetables. This nourishing concoction is perfect for sipping on its own or as a base for soups and stews.

Ingredients:

• Chicken carcass, broken into smaller pieces

• 2 Large carrots, roughly chopped

• 2 Onions, quartered

• 3 Celery stalks, roughly chopped

• 4 Whole garlic cloves

• 2 tbsps Olive oil

• 1 tsp or stem Thyme

• 1 tsp or stem Rosemary

• 3 Whole cloves

• 10 Black peppercorns

• 2 Bay leaves

• 10 cups Water

Instructions:

1. In a large pot, heat the olive oil over medium heat. Add the carrots, onions, celery, and garlic cloves. Sauté until the vegetables are slightly caramelized, about 7-10 minutes.

2. Add the chicken carcass to the pot.

3. Pour in the water, ensuring the chicken and veggies are submerged.

4. Add thyme, rosemary, cloves, peppercorns, and bay leaves.

5. Bring the mixture to a gentle boil, then reduce heat to low. Simmer for 3-4 hours, occasionally skimming off any impurities.

6. Turn off the heat and let cool slightly.

7. Strain the broth, discarding the solids.

8. Cool to room temperature before refrigerating. Once chilled, remove any surface fat if desired.

9. Store in the refrigerator for up to a week or freeze for longer storage.

Notes:

• Consider roasting the chicken carcass at 400°F for 20 minutes to intensify flavor.

• Fresh herbs enhance flavor, but ensure dried herbs are not stale.

• For a clearer broth, clarify with egg whites or strain through cheesecloth.
