Warm Smoked Salmon Pasta Alfredo

Ingredients:

  • 2 cups fettuccine pasta

  • 1 tablespoon olive oil

  • 1 cup heavy cream

  • 2 tablespoons unsalted butter

  • 1 cup grated Parmesan cheese

  • 2 cloves garlic, minced

  • Salt and freshly ground black pepper, to taste

  • 8 ounces smoked salmon, flaked

  • 2 tablespoons chopped fresh parsley

  • Zest and juice of 1 lemon

Instructions:

1. Cook the fettuccine pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.

2. In a large pan, heat the olive oil over medium heat. Add the garlic and sauté until fragrant, around 1 minute.

3. Stir in the heavy cream and butter. Allow the mixture to come to a simmer, then reduce the heat to low.

4. Gradually add the grated Parmesan cheese, stirring constantly until the cheese has melted and the sauce is creamy.

5. Season the sauce with salt and freshly ground black pepper to taste.

6. Add the flaked smoked salmon to the pan and stir well to combine. Allow it to warm through for a couple of minutes.

7. Add the cooked fettuccine to the pan, tossing well to ensure the pasta is fully coated in the Alfredo sauce.

8. Stir in the lemon juice and zest, then sprinkle the chopped parsley over the top of the pasta just before serving.

Notes:

  • Use freshly grated Parmesan cheese for the best flavor and creaminess. Pre-shredded cheese often contains additives that prevent it from melting smoothly.

  • Reserve a cup of pasta water before draining. If your sauce becomes too thick, add a bit of the pasta water to thin it out.
