  6. Once done add the milk, salt and cayenne pepper.
  7. Whisk until smooth and starting to thicken.
  8. One it has started to thicken, cut off the heat and add the pepper Jack cheese and stir until melted.
  9. Once melted and the cheese sauce has come together, set to the side.
  10. Open your tortillas and add two scoops of meat and some grated cheddar cheese to the tortilla and wrap it tightly.
  11. Repeat until all of the meat mixture and most of the cheese is gone.
  12. Place them in a casserole dish.
  13. Top with cheese sauce and sprinkle with leftover cheese.
  14. Place into your preheated oven and bake until golden brown and bubbly on top. About 25-30 minutes.
