Easy Gourmet Creamy Mushroom Risotto

Ingredients:

• 1 cup arborio rice

• 4 cups low-sodium chicken broth

• 1 cup finely chopped onion

• 2 cloves garlic, minced

• 2 cups sliced mushrooms

• 2 tablespoons olive oil

• 1/2 cup dry white wine

• 1/2 cup freshly grated Parmesan cheese

• 2 tablespoons unsalted butter

• Salt and black pepper, to taste

• Chopped fresh parsley, for garnish

Instructions:

1. In a pot, bring the chicken broth to a simmer.

2. Heat olive oil in a large skillet over medium heat. Add the onion, garlic, and mushrooms, sautéing until the onions are translucent and the mushrooms have released their liquid, about 5-7 minutes.

3. Add the arborio rice to the skillet and stir for 2 minutes, coating the grains in the oil and lightly toasting them.

4. Pour in the white wine, stirring constantly, until the wine has been fully absorbed by the rice.

5. Begin adding the simmering broth to the rice one ladle at a time, stirring continuously. Wait until each ladleful is almost completely absorbed before adding the next.

6. Continue this process until the risotto is creamy and the rice is al dente, about 18-20 minutes.

7. Remove from heat, then stir in the Parmesan cheese and butter until well combined. Season with salt and black pepper.

8. Garnish with fresh parsley before serving.

Notes:

• It’s important to stir the risotto constantly to release the starch from the rice, this gives the risotto its creamy texture.

• Feel free to experiment with different types of mushrooms for varied flavors.
