Garlic Butter Ribeye Steak and Cheese Stuffed Twice Baked Potatoes

Ingredients:

• 2 large baking potatoes

• 1 ribeye steak, cubed

• 2 tablespoons butter

• 2 tablespoons olive oil

• Salt and black pepper, to taste

• 3 cloves fresh minced garlic

• 2 tablespoons chopped chives

• 1/2 cup grated cheddar cheese

• 1/2 cup grated mozzarella cheese

• Sour cream, for serving

Instructions:

1. Preheat the oven to 400°F (200°C).

2. Wash and scrub the baking potatoes thoroughly. Pat them dry and pierce them with a fork a few times. Rub the potatoes with olive oil and a sprinkle of salt. Place them directly on the oven rack and bake for about 45-50 minutes, or until the potatoes are tender when pierced with a fork.

3. While the potatoes are baking, prepare the ribeye steak. Heat a skillet over medium-high heat. Add 1 tablespoon of butter and 1 tablespoon of olive oil to the skillet. Once hot, add the cubed ribeye steak. Season with salt and black pepper. Sear the steak cubes until they are browned and cooked to your desired level of doneness. Remove from the skillet and set aside.

4. In the same skillet, add the remaining butter and minced garlic. Sauté the garlic until fragrant and golden. Add the cooked ribeye steak back to the skillet and toss to coat the steak in the garlic butter. Set aside.

5. Once the baked potatoes are done, let them cool slightly. Cut off the top third of each potato and scoop out the insides, leaving a thin layer of potato on the skin. Place the scooped potato insides in a bowl and mash them with a fork.

6. To the mashed potatoes, add the garlic butter ribeye steak, chopped chives, grated cheddar cheese, and grated mozzarella cheese. Mix everything together until well combined.

7. Stuff the potato skins with the ribeye steak and cheese mixture, packing it gently. Place the stuffed potatoes on a baking sheet.

8. Bake the stuffed potatoes in the preheated oven for an additional 15-20 minutes, or until the cheese is melted and bubbly.

9. Serve the garlic butter ribeye steak and cheese stuffed twice baked potatoes with a dollop of sour cream on top. Garnish with additional chives if desired.

Notes to Make It Better:

• For an extra burst of flavor, consider adding caramelized onions or sautéed mushrooms to the ribeye steak mixture.

• If you prefer a spicier kick, sprinkle some red pepper flakes over the steak before mixing it with the mashed potatoes.
