Honey-roasted carrots with Herbs

Ingredients:

• 1.5 pounds carrots, peeled and sliced diagonally

• 3 tablespoons olive oil

• 2 tablespoons honey

• 2 cloves garlic, minced

• 1 tablespoon fresh thyme leaves

• 1 tablespoon fresh rosemary, chopped

• Salt and freshly ground black pepper, to taste

• Optional: A sprinkle of parsley for garnish

Instructions:

1. Preheat Oven: Preheat your oven to 400°F (200°C).

2. Prepare Carrots: In a large bowl, toss the carrots with olive oil, honey, minced garlic, thyme, rosemary, salt, and pepper until they are well coated.

3. Roast Carrots: Spread the carrots in a single layer on a baking sheet lined with parchment paper. Roast for 25 minutes, or until the carrots are tender and caramelized, stirring halfway through.

4. Garnish and Serve: Sprinkle with parsley for garnish before serving, if desired.

Notes:

• Carrot Size: If the carrots are very thick, cut them in half lengthwise for more even cooking.

• Honey Substitute: Maple syrup can be used as an alternative to honey for a different flavor.

• Roasting Tips: Ensure the carrots are not overcrowded on the baking sheet for even roasting.
