Heavenly Hot Crossed Buns

Ingredients:

• 500g all-purpose flour

• 75g sugar

• 1 tsp salt

• 2 tsp ground cinnamon

• 1/2 tsp ground nutmeg

• 7g dry yeast

• 300ml warm milk

• 50g unsalted butter, melted

• 1 large egg, beaten

• 150g mixed dried fruits (raisins, currants, candied citrus peel)

• Zest of 1 orange

For the cross:

• 75g all-purpose flour

• Water to mix

For the glaze:

• 3 tbsp apricot jam

Instructions:

1. Mix Dry Ingredients: In a large bowl, combine flour, sugar, salt, cinnamon, nutmeg, and yeast.

2. Add Wet Ingredients: Make a well in the center, pour in warm milk, melted butter, and beaten egg. Mix to form a dough.

3. Knead the Dough: Turn out onto a floured surface and knead for about 10 minutes until smooth.

4. First Rise: Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm place for 1 hour or until doubled in size.

5. Add Fruits: Knock back the dough, add dried fruits and orange zest, and knead lightly.

6. Form Buns: Divide the dough into 12 equal pieces, shape into buns. Place on a baking tray, slightly spaced apart.

7. Second Rise: Cover with a cloth and let rise for another hour.

8. Preheat Oven: Preheat oven to 200°C (390°F).

9. Make the Cross: Mix flour with enough water to make a paste. Pipe crosses on the buns.

10. Bake: Bake for 20 minutes or until golden.

11. Glaze: Warm apricot jam and brush over the hot buns.

• Yeast: Ensure the yeast is fresh for a good rise.

• Dried Fruits: Soak them in orange juice or rum for an extra flavor boost.

• Kneading: Proper kneading is key to soft, fluffy buns.

• Temperature: Keep the dough in a warm, draught-free area for rising.
