Ingredients:
For the Lamb Filling:
• 2 tbsp olive oil
• 1 large onion, finely chopped
• 2 carrots, diced
• 2 cloves garlic, minced
• 1.5 pounds ground lamb
• 2 tbsp tomato paste
• 1 cup beef or lamb broth
• 1 tsp Worcestershire sauce
• 1 tsp rosemary, chopped
• 1 tsp thyme, chopped
• Salt and pepper, to taste
• 1 cup frozen peas
For the Mashed Potato Topping:
• 2 pounds potatoes, peeled and quartered
• 1/4 cup butter
• 1/2 cup milk
• Salt and pepper, to taste
Instructions:
1. Cook Potatoes: Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and mash with butter and milk. Season with salt and pepper. Set aside.
2. Prepare the Filling: Heat olive oil in a large skillet over medium heat. Add onions and carrots, cooking until softened. Add garlic and cook for another minute.
3. Cook Lamb: Increase the heat to medium-high and add the ground lamb. Cook until browned. Drain excess fat.
4. Add Flavors: Stir in tomato paste, broth, Worcestershire sauce, rosemary, thyme, salt, and pepper. Bring to a simmer and cook until slightly thickened. Stir in the frozen peas.
5. Assemble: Preheat your oven to 400°F (200°C). Spoon the lamb mixture into a baking dish. Top with the mashed potatoes, spreading evenly.
6. Bake: Bake for about 20-30 minutes, or until the top is golden and the edges are bubbly.
7. Serve: Let it cool for a few minutes before serving.
