The Best Roast Beef For The Holidays You Will Ever Eat!

But to get the most juicy and delicious beef you need to use a meat thermometer. This is by far my favorite one!

Prep Time: 20 minutes

Cook Time: 1.5 to 2 hours (depending on the size of the roast)

Inactive Time: 20 minutes (for resting)

Servings: 6-8


Ingredients:

• 1 (3 to 4-pound) beef roast (such as rib roast or sirloin tip)

• 2 tablespoons olive oil

• 2 tablespoons kosher salt

• 1 tablespoon freshly ground black pepper

• 2 teaspoons dried rosemary

• 2 teaspoons dried thyme

• 2 teaspoons garlic powder

• 1 teaspoon onion powder

• 1/2 cup beef broth (for the roasting pan)


Instructions:

1. Remove the beef roast from the refrigerator at least 1 hour before cooking to allow it to come to room temperature.

2. Preheat your oven to 375°F (190°C).

3. In a small bowl, mix together salt, black pepper, rosemary, thyme, garlic powder, and onion powder to create the seasoning blend.

4. Rub the beef roast all over with olive oil, then evenly coat it with the seasoning blend, pressing gently so it adheres to the meat.

5. Place the roast on a rack in a roasting pan. Pour beef broth into the bottom of the pan.

6. Roast the beef in the preheated oven for about 20 minutes per pound, or until it reaches your desired level of doneness (use a meat thermometer to check the internal temperature - 135°F for medium-rare, 145°F for medium).

7. Remove the roast from the oven and tent loosely with aluminum foil. Let it rest for at least 20 minutes before slicing. This allows the juices to redistribute throughout the meat, ensuring a moist and flavorful roast.

8. Slice and serve the roast beef with your favorite holiday sides.



Notes to Make it Better:

• For an added depth of flavor, consider marinating the roast in a mix of red wine, olive oil, and herbs overnight.

• You can also add root vegetables like carrots, potatoes, and onions to the roasting pan for a complete meal.

• Making gravy from the pan drippings can enhance the flavor of your roast beef.
