Old-Fashioned Chicken Dumplings

Ingredients:
• 1 whole chicken (hen recommended)
• Salt and pepper, to taste
• 1 cup hot water
• Self-rising flour, sifted (as needed)
• 1 ½ gallons of chicken broth
Instructions:
1. Place the chicken in a large pot, season with salt and pepper, and cover with water. Bring to a boil, then reduce to a simmer. Cook until the chicken is tender and falls off the bone, about 1 hour.
2. Remove the chicken, let it cool, then debone. Strain the broth and reserve 1 ½ gallons.
3. To make dumplings: In a large bowl, mix 1 cup hot water with enough self-rising flour to make a stiff, non-sticky dough, similar to biscuit dough.
4. On a waxed paper-covered surface, sprinkle some flour. Pinch off dough about the size of two biscuits, and roll out until very thin. Cut into 1 ½ x 2 ½-inch strips.
5. Bring the chicken broth to a slow boil. Drop the dumpling strips into the broth. Cook slowly for about 5 minutes or until the dumplings are cooked through.
6. Once the dumplings are done, add the deboned chicken back into the pot. Heat through and serve.
Notes:
• For a richer broth, simmer the chicken with onions, carrots, and celery.
• Dumpling dough can be made ahead and frozen with waxed paper between layers for convenience.
