Ingredients:

For the crust:

• All-purpose flour — 1¼ cups

• Salt — ½ teaspoon

• Sugar — ½ teaspoon

• Cold unsalted butter, cut into pieces — ½ cup (1 stick)

• Ice water — 3-4 tablespoons

For the filling:

• Pure pumpkin puree — 1 (15 oz) can

• Granulated sugar — ¾ cup

• Ground cinnamon — 1 teaspoon

• Ground ginger — ½ teaspoon

• Ground nutmeg — ¼ teaspoon

• Large eggs — 2

• Heavy cream — 1 cup

• Vanilla extract — 1 teaspoon

Instructions:

1. Pie Crust Preparation: Mix flour, salt, and sugar in a large bowl. Blend in butter until the mixture resembles coarse meal. Gradually add ice water until dough holds together. Shape into a disk, wrap, and chill for 1 hour.

2. Preheat Oven: Set to 425°F (220°C).

3. Dough Rolling: Roll dough on a floured surface to a 12-inch round. Place in a 9-inch pie dish. Trim and crimp the edges.

4. Filling Preparation: Whisk pumpkin, sugar, cinnamon, ginger, nutmeg, eggs, cream, and vanilla in a bowl until smooth.

5. Assemble Pie: Fill the crust with the pumpkin mixture.

6. Baking: Bake at 425°F for 15 minutes. Lower the heat to 350°F (175°C) and bake for another 40 minutes, or until the filling sets but is slightly wobbly at the center.

7. Cooling: Cool the pie on a wire rack and then chill for 2 hours before serving.

Notes:

• Use a combination of shortening and butter for a richer crust.
