Inactive Time: 2 hours

Servings: 8

Ingredients:

For the crust:

• All-purpose flour — 1¼ cups

• Salt — ¼ teaspoon

• Sugar — 1 tablespoon

• Cold unsalted butter, cut into cubes — ½ cup

• Ice water — 4 tablespoons

For the filling:

• Sweet potatoes, cooked and mashed — 2 cups

• Unsalted butter, melted — ¼ cup

• Sugar — 1 cup

• Milk — ½ cup

• Eggs — 2

• Ground nutmeg — ½ teaspoon

• Ground cinnamon — ½ teaspoon

• Vanilla extract — 1 teaspoon

Instructions:

1. Prepare the Crust: In a large bowl, mix flour, salt, and sugar. Cut in butter until the mixture resembles coarse crumbs. Gradually add ice water, stirring until the dough forms a ball. Wrap and chill for 30 minutes.

2. Oven Preheating: Preheat oven to 350°F (175°C).

3. Roll and Shape Dough: Roll out dough on a floured surface to fit a 9-inch pie plate. Place crust in pie plate, trim and crimp the edge.

4. Filling Mixture: In a bowl, combine mashed sweet potatoes, melted butter, sugar, milk, eggs, nutmeg, cinnamon, and vanilla. Beat until mixture is smooth.

5. Fill and Bake: Pour filling into the pie crust. Bake for 55 minutes, or until a knife inserted near the center comes out clean.

6. Cooling: Cool on a wire rack. Refrigerate for 2 hours before serving for best flavor.

Notes:

• Ensure sweet potatoes are well-cooked and mashed smoothly for the best texture.

• For a lighter filling, you can substitute milk with half-and-half or a light cream.

• Garnish with a dollop of whipped cream or a sprinkle of cinnamon for an extra flair.
