Ingredients:

• 4 large potatoes

• 1 teaspoon salt

• 1/2 teaspoon white pepper

• 1/2 teaspoon garlic powder

• 1/4 cup cornstarch

• Vegetable oil (for deep frying)

Instructions:

1. Wash and scrub the potatoes thoroughly. Place them in a pot of cold water, and bring it to a boil. Cook the potatoes until they are tender but not mushy. This usually takes about 15-20 minutes.

2. Once the potatoes are cooked, drain the water and let them cool for about 30 minutes.

3. Peel the potatoes and place them in a large mixing bowl. Mash the potatoes until smooth and lump-free.

4. Add the salt, white pepper, garlic powder, and cornstarch to the mashed potatoes. Mix well until all the ingredients are evenly incorporated.

5. Shape the seasoned potato mixture into tater tot shapes, using your hands to form small cylindrical pieces.

6. In a deep pot or fryer, heat vegetable oil to 350°F (175°C).

7. Carefully drop the shaped potato puffs into the hot oil in batches. Avoid overcrowding the pot, as this may reduce crispiness. Fry each batch twice for added crispiness, ensuring a golden-brown exterior.

8. Remove the potato puffs from the oil with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

9. Serve the Crispy Potato Puffs immediately while they are still hot and crunchy.

Notes to Make It Better:

• For added flavor, consider mixing in some grated cheese or finely chopped herbs like chives, parsley, or thyme into the mashed potato mixture before shaping them.
