Spinach and Black-eyed Pea Soup

Description: This rich and hearty spinach and black-eyed pea soup is the perfect way to utilize leftover beans. The addition of a Parmesan rind elevates the flavor with a touch of umami, creating a comfort dish that’s nourishing and flavorful.

Ingredients:

• 2 tablespoons butter

• 2 stalks celery, chopped

• 1 large onion, diced

• 3 cloves garlic, minced

• 1 large potato, diced

• 2 carrots, sliced

• 2 cups leftover black-eyed peas with smoked turkey

• 4 cups spinach, roughly chopped

• 1 teaspoon salt

• 1/2 teaspoon black pepper

• 1 cup heavy cream

• 1 Parmesan rind

Instructions:

1. Sauté Vegetables: In a large pot, melt butter over medium heat. Add celery, onion, and garlic, and sauté until soft.

2. Add Root Vegetables: Stir in potato and carrots, cooking for a few minutes until slightly softened.

3. Simmer with Peas: Add leftover black-eyed peas along with enough water to cover the ingredients. Toss in the Parmesan rind, salt, and black pepper, and bring to a simmer.

4. Cook Until Tender: Simmer for 25-30 minutes, or until the potatoes and carrots are tender.

5. Add Spinach and Cream: Stir in the spinach and cook until wilted. Pour in the heavy cream and cook for another 5 minutes, stirring well.

6. Adjust Seasonings: Taste and adjust seasoning as needed.

7. Serve: Ladle into bowls and garnish with grated Parmesan if desired.

Notes to Make It Better:

• To create a smoother texture, you can use an immersion blender to partially blend the soup.

• The Parmesan rind can be removed before serving, but make sure to let it simmer with the soup for the full flavor effect.

• A dash of nutmeg or fresh herbs like thyme can add more depth to the flavor.
