Swedish Äppelkaka

Ingredients:
Cake:
• 2 eggs
• 3/4 cup granulated sugar
• 1 1/2 tsp baking powder
• 2 tsp vanilla extract (as a substitute for vanilla sugar)
• 1 cup + 2 tbsp all-purpose flour
• 2/3 cup melted butter
Topping:
• 2 apples
• Cinnamon, to taste
• 2 tbsp granulated sugar
Instructions:
1. Preheat the oven to 356°F (180°C). In a large mixing bowl, whisk the eggs and 3/4 cup granulated sugar until fluffy.
2. In a separate bowl, mix the 1 1/2 tsp of baking powder, 2 tsp vanilla extract, and 1 cup + 2 tbsp all-purpose flour.
3. Combine the dry ingredients with the egg mixture, and then stir in 2/3 cup melted butter to form a smooth batter.
4. Grease and flour a 9.4-inch springform pan, and pour the batter into it.
5. Peel and thinly slice the 2 apples.
6. Artfully arrange the apple slices on top of the batter.
7. Sprinkle cinnamon and 2 tbsp granulated sugar over the apples. Optional: add some chopped almonds.
8. Place the pan on the bottom rack of the oven and bake for 35 minutes.
9. Serve warm, preferably with homemade vanilla whipped cream or vanilla sauce.
Notes to Make it Better:
• For a richer flavor, you can use brown sugar instead of granulated sugar in the cake batter.
• To enhance the apple flavor, try adding a teaspoon of apple pie spice to the batter.
• For extra crunch, add some chopped walnuts or pecans to the batter.
