This recipe is for a simple, no-bake cookie made with Ritz crackers, peanut butter, and chocolate. The Ritz crackers are spread with peanut butter and sandwiched together, then dipped in melted chocolate and topped with sprinkles. The cookies are then chilled until the chocolate has set and can be enjoyed.
- Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between, until melted and smooth. Or do it like me, the old fashioned way and melt it over the stove with a double boiler.
- Spread a thin layer of peanut butter on half of the Ritz crackers, then place another Ritz cracker on top to form a sandwich. Repeat with remaining Ritz crackers and peanut butter.
- Dip each Ritz cracker sandwich into the melted chocolate, making sure to coat both sides evenly.
