Description: Savor the warmth of tradition and flavor with Great Granny Mae’s Thanksgiving Cornbread Dressing. This cherished family recipe, handed down through generations, combines the heartiness of cornbread with tender chicken and aromatic onions, creating a Thanksgiving classic that’s sure to evoke memories of family gatherings.

Prep Time: 20 minutes

Cook Time: 40 minutes

Inactive Time: 8 hours to overnight

Servings: 8

Ingredients:

• 2 cakes of stale cornbread, crumbled

• 1 large egg, lightly beaten

• 3 cups chicken broth (reserved from boiling chicken thighs)

• 3 chicken thighs, boiled with bone, then shredded

• 2 whole onions, finely chopped and sautéed

• Salt and pepper, to taste

Instructions:

1. Preparation: The night before, crumble the stale cornbread and leave it uncovered at room temperature to dry out.

2. Preheat Oven: Preheat your oven to 350°F (175°C).

3. Combine Ingredients: In a large mixing bowl, combine the crumbled cornbread, sautéed onions, and shredded chicken thighs. Add the beaten egg and mix well.

4. Add Broth: Gradually pour in the chicken broth, stirring until the dressing reaches a moist but not soggy consistency. Season with salt and pepper to taste.

5. Bake: Transfer the mixture to a greased baking dish. Cover with foil and bake for 30 minutes. Then remove the foil and bake for an additional 10 minutes, or until the top is golden and crispy.

6. Serve: Let the dressing sit for a few minutes before serving.

Notes to Make It Better:

• Stale Cornbread: Ensuring your cornbread is sufficiently stale and dry is key. This helps it absorb the flavors and broth better.

• Broth Adjustment: If the mixture seems too dry, add a bit more broth; if it’s too moist, add a bit more crumbled cornbread.

• Herbs & Spices: Feel free to add herbs like sage, thyme, or rosemary for added flavor.
