Ingredients:

• 1 lb ground beef

• 2 cans kidney beans in chili sauce (approx. 16 oz each)

• 2 cans of stewed tomatoes (approx. 14.5 oz each)

• 1 bottle of tomato juice (approx. 46 oz)

• 2 packs of chili spice (preferably Ingles Lora Lynn brand)

• Salt and pepper, to taste

Instructions:

1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.

2. Add the kidney beans (with their sauce), stewed tomatoes, and tomato juice to the pot. Stir to combine.

3. Stir in the chili spice packs. If you’re using a different brand, adjust according to taste.

4. Bring the chili to a boil, then reduce heat to a simmer. Cover and let it cook for about 45 minutes to an hour, stirring occasionally.

5. Season with salt and pepper to taste. If the chili seems too thick, add a bit more tomato juice or water; if it’s too thin, cook uncovered for an additional 10-15 minutes.

6. Remove from heat and let it sit for about 15 minutes before serving. This allows the flavors to meld together beautifully.

Notes to Make It Better:

• For a spicier kick, add a teaspoon of cayenne pepper or diced jalapeños.

• To deepen the flavor, consider adding a tablespoon of unsweetened cocoa powder or a shot of espresso.

• A splash of apple cider vinegar or a teaspoon of sugar can balance the acidity and sweetness.

• Letting the chili rest overnight in the refrigerator can enhance the flavors even more.

• Serve with toppings like shredded cheese, sour cream, chopped onions, or green onions.
