Goober (Peanut) Brittle Recipe

Goober Brittle

Description: Indulge in the classic, homemade goodness of Goober Brittle, a simple yet irresistible treat. Servings: 8-10

Ingredients:

• 2 cups granulated sugar

• 1⅑ cups shelled peanuts, coarsely chopped

• A few grains of salt

Instructions:

1. Place sugar in a heavy iron or agate pan. Melt it over low heat, stirring constantly to prevent the sugar from scorching.

2. Once the sugar has melted into a thin golden syrup, carefully remove the pan from the flame.

3. Quickly stir in the coarsely chopped peanuts and a few grains of salt, ensuring the nuts are evenly coated with the syrup.

4. Immediately spread the candy mixture onto an ungreased flat surface or baking sheet. Spread it out into an even layer.

5. Allow the brittle to cool and harden. This should take about 30 minutes.

6. Once it’s nearly cold but still slightly warm, score the brittle into squares using a knife. Alternatively, you can wait until it’s completely hardened and then break it into irregular pieces.

Notes to Make it Better:

• For a twist, try adding a pinch of cinnamon or vanilla extract to the sugar as it melts.

• To prevent sticking, you can lightly oil the surface or baking sheet before spreading the brittle.

• If you prefer a thinner brittle, spread the mixture out more thinly on the surface.
