This dish is perfect for a cozy night in or for serving to a crowd, and is guaranteed to satisfy your pasta cravings.
To start off, you'll need a bag of spinach & ricotta tortellini, cooked according to package instructions. While the pasta is cooking, you can start on the Alfredo sauce. The sauce is made with a combination of milk, parmesan cheese, onion, garlic, black pepper, chicken fond, flour, and butter, which are all cooked together until thick and creamy.
Let’s Get Saucy
To make the sauce, start by grating one yellow onion and six cloves of garlic. In a skillet, add your butter, black pepper, chicken fond, grated garlic and grated onion. Cook until fragrant and the butter has started to brown. This will give the sauce a rich, savory flavor. Once the garlic and onion are fragrant, add in the flour and cook for another 3-5 minutes. This will help cook out the floury taste and thicken the sauce.
Once the flour is cooked, lower the temperature to low and add in the milk. This process will take awhile, but trust me, it is worth it and will ensure your sauce doesn’t burn and break. Whisk well until the milk is fully incorporated and the sauce is smooth. Once the sauce is to the thickness you like with no lumps, add in half of the parmesan cheese. Whisk again until all cheese has melted into the sauce. This will give the sauce a rich and cheesy flavor.
Put it Together and What Do You Got?
Now that the pasta and sauce are ready, it's time to combine them in a 9x13 casserole dish. Add your cooked pasta and sauce to the dish and carefully fold the sauce into the pasta to make sure everything is evenly coated. Top with the remaining parmesan cheese and place into a preheated oven of 365F. Let bake for 25-30 minutes or until golden brown and bubbly on top.
