Ingredients

Marinade
  • 4 chicken breast, filleted & pounded flat
  • 2 cups buttermilk
  • 1 large egg
  • 2 tbsps yellow mustard
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 2 tsps cayenne pepper
  • 2 tsps smoked paprika
  • 1-2 tsps salt
  • 1-2 tsps accent or msg
  • 1-2 tsps black pepper
  • 1-2 tsps white pepper
  • 1-2 tsps seasoning salt such as lawrys or fry seasoning
Batter
  • 3 cups self rising flour, if you don’t have self rising flour, add 1-2 tsps of baking powder and 1/4 tsp salt to every cup of flour.
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 2 tsps cayenne pepper
  • 2 tsps smoked paprika
  • 1-2 tsps salt
  • 1-2 tsps accent or msg
  • 1-2 tsps black pepper
  • 1-2 tsps white pepper
  • 1-2 tsps seasoning salt such as lawrys or fry seasoning

Instructions

  1. In a bowl combine the egg, seasonings for the marinade, buttermilk and mustard. Whisk together well until all is incorporated.
  2. Filet your chicken breasts and remove any unwanted bits on the chicken. Flatten them gently and set to the side. Repeat until all chicken has been flattened.
  3. Add the chicken to the marinade and make sure all pieces are submerged and covered.
  4. Put a lid or top on the bowl and set in the refrigerator for at least four hours. Best if overnight to really tenderize the chicken.
  5. Once marinated, take out of the fridge and let it come to room temperature.
  6. While it is coming to room temperature make your dry batter.
  7. Add in the flour and seasonings and whisk well. Make sure seasonings is evenly distributed into the flour.
  8. Add your chicken pieces 1-2 at a time and dredge them. Making sure all pieces are covered and there are no naked bits to the chicken.
  9. Sit the chicken to the side and repeat.
  10. Let the batter sit in the chicken while you bring your oil to temperature. If you need a frying guide, here is a link to my guide to deep frying.
  11. Oil should be at 365F. As this is a shallow fry. And about 1-2 inches deep of oil.
  12. Once oil is ready fry your chicken u til golden brown on each side and the chicken is white throughout the whole chicken. This shouldn’t take more than 7-10 minutes per piece. Especially with how thin the chicken is.
  13. Once done frying, set to the side on a wire rack to allow excess grease to drain off from the chicken and keeping it crispy.
  14. Repeat until all chicken is cooked.
  15. Serve and enjoy!
